Gluten Free 1 year!

I have been Gluten Free for one year now.  I am very happy that I have made this choice.  Of course I have had some trial and errors.  This is a milestone for me!  One year ago I was so sick and in lots of pain and was afraid to eat anything. I took lots of tests to show that my gallbladder and pancreas were great so the doctors scratched their heads and left me to find this out myself.  Rose my quickbook specialist had me over the day after my doctor appt and served me gluten free muffins.   We compared our symptoms and I switched my diet that day!  I feel great now!  I would never go back to my old diet.   I am challenged at times to find a fast meal when traveling, I usually pack some energy bars.  Most restaurants will have a gluten free menu or they are willing to change certain menu items. Usually with no butter, seasoning or bread, but I can actually eat and feel good afterwards.   Stores are packing their shelves with more gluten free options.  Whole Foods has dedicated a whole section to us!  PCC is another great place to shop and just enjoy the many selections.   I have found I need to carry a magnifying glass to read all the labels though.   Did you know gravies, most good tasting candies, enchilada sauce, soups and many of the frozen dinners have wheat in them or the facility they were packaged in contains wheat!   I have learned to make a gravy from scratch and my own soups. I am loving my new life style!  On to the next year!

That is something to be proud of! I am currently re-evaluating my diet and trying to implement better choices…it’s not an easy thing to do! You should be very proud :)

Way to go, Kathy! It’s been 2 full gluten free years for me, and get’s easier all the time. Even my 2 favorite Italian restaurants now have GF menu items. It’s especially good to havie friends like you to talk with and compare notes, tips and recipes.
